The Beginning of the Rainbow Cake Collection

I made these cupcakes in January this year. They were my only cupcakes made from a box but to be completely honest they were the best box made cupcakes I have ever eaten. Some people say I use too much colouring in my rainbow cakes but I say pfft...what is the point of eating a rainbow if it doesn't stand out and you can't taste it? Give the kids a little bit of extra coloured fuel for their already sugar filled high :) They'll enjoy it, you'll enjoy it and they'll eventually run themselves ragged anyway.
